To prepare: [1 lb. dry lentils (2 cups) = 5-6 cups cooked lentils]. Sort and rinse lentils. In saucepan, combine lentils with water and salt (for 1 lb. dry lentils, use 6 cups water and 3 tsp. salt) and bring to boil. Reduce heat and simmer, covered, about 20-30 minutes until lentils are tender (overcooking may cause lentils to split). Drain immediately. To Serve: Add cooked lentils to soups, salads and rice.
