This edible inner portion of the stem of the cabbage palm tree, which grows in many tropical climates, is one of the most appreciated ingredients in todays gastronomy. Similar to white asparagus, with a firmer texture, the flavor is reminiscent of an artichoke. A few stalks will enhance all greens and transform them in a magnificent salad.
