Beth's recipe that serves 5-7 of your favorite guests.
Season at room temperature with pepper, garlic, onion and a sweet butter rub (or grape seed oil). Drizzle honey to glaze, and pour mango juice around roast. Place in preheated oven at 450 degrees in a deep uncovered baking dish for 15 minutes. While basting the roast every 30 minutes, keep covered for 2 hours at 325 degrees. Remove when internal temp reaches 125 degrees. Let sit for 15 minutes as roast will continue to cook. Remove netting, slice and serve.
